Everyone is familiar with Chinese fried rice. This dish adds a twist as it uses fresh pineapple, which is a popular fruit in Chengdu. Pineapple is sold on the street, cut into fancy shaped chunks and served on a stick. This fried rice dish is a showpiece as it is served using the pineapple husk as a serving bowl.
Ingredients:
9 oz or 3-4 cups Cooked white asian rice ( Best to use leftover rice)
1/2 Pineapple cut in half
2 eggs whisked in a small bowl
1/4 cup Roasted peanuts crushed
1 cup Celery diced
1 cup Red bell pepper diced
1/3 cup Green peas
1/2 cup Thick sliced ham ( or Chinese sausage or spam any protein you prefer )
1/4 cup Green onions finely chopped
1 tsp Soy sauce
4 tbsp canola oil ( Or any vegetable oil )
1 tsp Chinese cooking wine
1 tsp Salt
