Ingredients:
- 1 medium-sized watermelon
- 2400 ml fresh watermelon juice (from the watermelon)
- 100 g Konjac powder (also known as konjac flour or glucomannan)
Instructions:
1. Prepare the Watermelon Bowl:
- Cut the watermelon in half lengthwise.
- Use a spoon or melon baller to scoop out the flesh, creating a hollow watermelon bowl. Set the bowl aside and place it in the refrigerator to keep it cool.
2. Make Watermelon Juice:
- Place the scooped-out watermelon flesh into a blender.
- Blend until smooth to extract the juice.
- Strain the blended watermelon through a fine mesh sieve or cheesecloth to filter out the pulp, collecting about 2400 ml of watermelon juice.
3. Dissolve the Konjac Powder:
- In a pot, take a small amount of the watermelon juice (about 200 ml) and gradually sprinkle in the Konjac powder while whisking to avoid lumps. Mix well until the powder is fully dissolved.
4. Combine and Heat:
- Pour the remaining watermelon juice into the pot with the dissolved Konjac powder. Stir well to combine.
- Turn the heat to high and bring the mixture to a boil while stirring continuously. Once it reaches a boil, turn off the heat.
5. Set the Jelly:
- Carefully pour the watermelon juice mixture into the prepared watermelon bowl.
- Chill in the refrigerator for about 1 hour, or until the jelly is fully set.
6. Serve:
- Once set, cut the jelly into slices or cubes directly from the watermelon bowl.
- Serve chilled as a refreshing dessert!
