Here are 5 of my favorite BBQ marinade recipes that will transport your taste buds straight to the vibrant night markets and bustling streets of my hometown Chengdu. Don't need to go to BBQ restaurants anymore :)
But we can't forget our friends from across the border - I've also included a Spicy Korean-Style Beef Marinade that's bursting with the bold, complex flavors that Korean BBQ is famous for. Gochujang (Korean chili paste), garlic, soy sauce, honey, and toasted sesame seeds come together to create a sticky-sweet-spicy glaze that's out of this world.

1. Bbq sauce for vegetables : 蔬菜烧烤酱
Minced garlic and Xiao mi jiao 大蒜,小米椒
3 tbsp soy sauce 酱油
2 tbsp oyster sauce 蚝油
1 tbsp sugar 糖
1/2 tbsp chili pepper powder 辣椒面
1/2 tbsp cumin powder 孜然
1 tsp black pepper 黑胡椒粉
Salt 盐
First up, we have a delicious Vegetable BBQ Sauce Marinade. This is perfect for grilling all kinds of veggies - from mushrooms and eggplant to zucchini and bell peppers. It's made with a blend of soy sauce, oyster sauce, sugar, chili pepper powder, cumin, black pepper, and a pinch of salt. The minced garlic and Xiao mi jiao (small chilies) add the perfect kick of flavor.
Save in a container and keep in the fridge, put the vegetables on the grill then brush the sauce on the vegetables.
2. Black pepper beef marinade 黑椒牛肉烧烤酱
1lb beef
1 egg white 蛋清
1 tbsp oyster sauce 蚝油
1/2 tbsp corn starch 淀粉
1/2 tbsp sugar 糖
1/2 tbsp black pepper powder 黑胡椒粉
1 tbsp cooking oil 油
Sliced half onion 半个洋葱
1 tsp chicken powder 鸡精
Next, let's dive into a Black Pepper Beef Marinade. I'll be using this on some juicy rib eye pre sliced into thin pieces. It's made with an egg white, oyster sauce, cornstarch, sugar, black pepper, cooking oil, sliced onions, and a touch of chicken powder to amp up the savory umami notes.Always taste good marinate the day before.
3. Spicy Korean style Beef (can use for pork or chicken) 韩式辣牛肉
2 tbsp Korean spicy sauce (gochujang sauce) 韩式辣酱
2 tbsp chopped garlic 大蒜
1 tbsp soy sauce 酱油
1 tbsp honey 蜂蜜
1 tbsp sesame oil 香油
1 tbsp sesame seeds 芝麻
For a spicy Korean twist, we have a Spicy Korean-Style Beef Marinade. This is great for beef, pork, or even chicken. It's made with gochujang (Korean chili paste), garlic, soy sauce, honey, sesame oil, and toasted sesame seeds.
4. Ma La Pork belly (or use ribs) 麻辣五花肉
1lb pork belly
Ginger and green onions 葱段,姜片或姜末
1 egg white 蛋清
1 tbsp Sichuan peppercorn powder 花椒
1 tbsp Chili pepper powder (optional ) 辣椒面
2 tbsp Cookingbomb chili sauce 我的酱
1 tbsp cumin powder 孜然
Salt 盐
1 tsp chicken powder 鸡精
My fourth marinade is a super flavorful Chinese Ma La Pork Belly Marinade. The Sichuan peppercorn powder and chili pepper powder give it an incredible numbing heat, while the ginger, green onions, egg white, and Cooking Bomb chili sauce create an umami flavor. You can also use dry chili pepper powder.
5. New Orleans chicken marinate (use for chicken wings) 新奥尔良烤鸡肉
1.5 lbs chicken white or dark meat, or use chicken wings
4 tbsp New Orleans spice mix and 1 tbsp honey 新奥尔良烤料,蜂蜜
