Meal Prep Mini Pizza for breakfast 


Ingredients:
- 2 1/3 cups bread flour
- 2 1/4 tsp yeast
- 1 1/2 tsp sugar
- 3/4 tsp salt
- 3/4 cup (180-200ml) warm water
- 2 tbsp olive oil
- Pizza toppings of your choice (e.g. chicken sausage, beef with green pepper, pineapple and ham, shrimp with peas and carrots, dragon fruit and pineapple)
- Pizza sauce
- Mozzarella Cheese

Instructions:

1. In a bowl, combine bread flour, yeast, sugar, and salt. Slowly add warm water and mix until a dough forms. Add olive oil and knead the dough. Place the dough in an oiled bowl, cover with plastic wrap, and let it rest for 30 minutes.

2. Once the dough has doubled in size, knead it on a floured surface and divide it into 10 equal pieces. Roll each piece into a 4-5 inch round disc.

3. Preheat your oven to 356F and poke holes in the shaped pizza dough with a fork. Brush with olive oil and bake for 5 minutes.

4. Remove the pre-baked dough from the oven and top with pizza sauce, cheese, your choice of protein and veggies, and more cheese.

5. Place the assembled mini pizzas in ziplock bags or containers with a lid, adding a paper liner for each pizza. Freeze until ready to eat.

6. When ready to eat, remove a pizza from the freezer and bake in the oven at 425F for 12-15 minutes or in the air fryer at 400F for 10-15 minutes.

Stir-Fry Beef with Green Pepper Recipe:



Ingredients:
- 1 bell pepper (or spicy green pepper), sliced
- 3 tbsp cooking oil
- 4 cloves of garlic, minced
- 1/3 cup sliced onions
- 1 lb beef, cut into cubes
- 3 tbsp soy sauce
- 2 tbsp cooking wine
- Ground black pepper, to taste

Marinade for the beef:
- 2 tbsp cornstarch
- 2 tsp salt
- 1 tsp sugar
- 2 tbsp water
- 1 tbsp dark soy sauce

Instructions:
1. In a bowl, combine the beef cubes with the marinade ingredients (cornstarch, salt, sugar, water, dark soy sauce). Let it marinate for 30 minutes.
2. Heat a wok or pan over high heat and add cooking oil. Once hot, add minced garlic and sliced onions, stirring until fragrant.
3. Add the marinated beef to the wok and stir-fry until the color changes (approximately 1-2 minutes). Add soy sauce, cooking wine, and ground black pepper, stirring well.
4. Add the sliced bell pepper to the wok and stir-fry for another minute, until the peppers are just tender.
5. Season with salt to taste and serve the stir-fry beef with green pepper hot as dinner dish with rice, or use as pizza topping!
