Garlic Black Pepper Mushroom Chicken 黑椒口蘑炒鸡肉

Cold oil, sliced garlic, low heat — this is how you get real garlic flavor without burning it.

Start with my Chicken Master Marinade — this uses one portion from that batch.

Ingredients

  • Marinated chicken (1 portion, ~605g / 1.3 lb), cut into bite-size pieces
  • Garlic cloves, sliced — 6–8 cloves (adjust to taste)
  • Button mushrooms — ~200g (adjust to taste)
  • Broccoli florets — 1–2 cups (blanched and frozen, from Part 1)
  • Light soy sauce — 1 tbsp
  • Dark soy sauce — 1 tsp
  • Black pepper, to taste

Directions

  1. Heat a pan with cold oil, add garlic, and fry on low heat until fragrant and lightly golden.
  2. Add marinated chicken, stir-fry until it changes color.
  3. Season with light and dark soy sauce.
  4. Add mushrooms, stir-fry until softened.
  5. Add black pepper. Finish with broccoli, stir-fry 1–2 minutes, then off heat.

💚 Chinese Mom Tip: Cold oil plus low heat is the secret — garlic in hot oil burns before it ever gets fragrant.
