This recipe is proof that you don't need a blazing hot pan to get that stir-fry flavor. The beef comes out tender ,the zucchini stays perfectly soft without turning mushy, and the rice soaks up all those beautiful beef juices. Best part? No oil splattering all over my stove, no standing there stirring for ten minutes. Just layer, close the lid, and walk away.
This has become my go-to "too tired to cook but still want real food" dinner.

Don't skip the cornstarch. This is the secret to tender beef. It coats the meat and locks in moisture, giving you that silky texture you get from restaurant stir-fry, without any of the wok work.
Slice your beef thin. If your beef isn't pre-sliced, pop it in the freezer for 15-20 minutes first. It firms up just enough to make thin, even slices much easier.
Make it your own. Swap the beef for thinly sliced chicken or pork, or use firm tofu for a vegetarian version. The method stays exactly the same.
