Stir-Fried Beef with Peppers & Cilantro 香菜彩椒炒牛肉

The one from my cookbook — garlic, ginger, and scallion fragrant first, beef in fast, out even faster.

Start with my Beef Master Marinade — this uses one portion from that batch.

Ingredients

  • Marinated beef (1 portion, ~454g / 1 lb)
  • 3 tbsp (45 ml) cooking oil
  • ¼ cup (24 g) green onions, chopped
  • 1 tbsp (6 g) fresh ginger, sliced
  • 2 tbsp (30 g) garlic, minced
  • ½ red bell pepper, chopped
  • ½ green bell pepper, chopped
  • ½ bunch cilantro, chopped, plus more for garnish
  • 2–3 tbsp (30–45 ml) chili sauce, to taste

Directions

  1. Heat oil in a wok over medium-high heat. Add green onions, ginger, and garlic — stir-fry until fragrant, about 30 seconds.
  2. Add marinated beef, stir-fry quickly until color changes, about 1 minute — don't overcook.
  3. Add bell peppers, stir-fry another minute, keeping them crisp.
  4. Turn off heat, stir in cilantro. Add chili sauce to taste.
  5. Total stir-fry time should stay under 3 minutes. Serve immediately, garnish with extra cilantro.
