Beef with King Oyster Mushrooms 牛肉杏鲍菇

Mushrooms seared golden first, set aside, then everything comes back together at the end.

Start with my Beef Master Marinade — this uses one portion from that batch. The mushrooms here are already blanched and frozen from Part 1.

Ingredients

  • 2 large king oyster mushrooms, blanched & frozen, sliced diagonally
  • 3 tbsp cooking oil
  • Green onion (scallion), cut into pieces — ~½ cup
  • 5 cloves garlic, sliced
  • 2 tbsp oyster sauce
  • 2 tbsp light soy sauce
  • Black pepper, to taste (optional)
  • Marinated beef (1 portion, ~454g / 1 lb)

Directions

  1. Heat oil in a wok, sear king oyster mushrooms until golden and fragrant on both sides. Remove, set aside.
  2. In the same wok, add garlic, fry until golden.
  3. Add green onion, then marinated beef — stir-fry together until beef changes color.
  4. Return mushrooms to the wok. Season with black pepper, oyster sauce, and light soy sauce.
  5. Toss to combine, plate and serve.

💚 Chinese Mom Tip: Sear the mushrooms first and set them aside — if they sit in the wok the whole time they turn rubbery instead of golden.
