Green Onion Beef Stir Fry is a classic, savory dish that highlights the vibrant aroma of fresh green onions paired with tender slices of beef. Quick and flavorful, it's perfect for a satisfying weeknight meal and pairs beautifully with steamed rice.
Ingredients:
1 lb beef tenderloin
2 large green onions, sliced into 2-inch pieces
4-5 slices ginger
6 red chili peppers, chopped
4 cloves garlic, thinly sliced
4 tbsp cooking oil (divided)
2 tbsp Chinese cooking wine
2 tbsp soy sauce
1 tbsp dark soy sauce
3 tsp sugar
2 tsp cornstarch mixed with 2 tbsp water (slurry)
Ingredients for Marination:
1 lb beef (sliced into thin pieces against the grain)
100g water
1 tsp salt
1 tbsp dark soy sauce
1 egg white
1 tsp baking soda
1/2 tbsp sugar
1 tbsp cornstarch
Tenderizing Instructions:
Slice the beef thinly against the grain for easier chewing.
Place beef in a bowl. Add a little water and sugar. Mix briskly with your hand. The sugar helps beef absorb water, making it juicier and tender.
Gradually add all the water, mixing thoroughly each time to help the beef absorb the liquid.
Add baking soda and mix well. Baking soda further enhances tenderness.
Season the beef by adding salt, dark soy sauce, egg white, and cornstarch. Mix until the beef is evenly coated.
Let the beef marinate for 15 minutes before cooking.
Cooking Instructions:
Heat 2 tbsp oil in a wok over high heat. Add marinated beef and stir fry quickly for about 30 seconds until beef changes color. Remove beef from wok and set aside.
Add remaining 2 tbsp oil to the wok. Stir fry green onions, ginger, garlic, and red chilies until fragrant.
Return the beef to the wok. Add Chinese cooking wine, soy sauce, dark soy sauce, and sugar. Stir fry on high heat for 15 seconds.
Pour in the cornstarch slurry to thicken the sauce. Stir well until glossy and beef is evenly coated.
Serve immediately with rice.
